Sydney side..

A quick day trip up to Sydney to see the food expo.. why.. I don't know actually, now that I'm here. Big commercial appliances and large food/coffee companies and wacky gimmicks. Aspinwall coffee, Indian coffee exporters are there.. Monsooned Malabar anyone..

CoE coffees, its been promised for a while, and finally they are on the boat, well plane actually.
Should arrive next week and after some roasting and tweaking they will be available as small lots retail and will be offered as clover coffees or coffee of the day espresso.. A full list next week.






Coffee rundown...

The lastest coffees in the house are the El Salvador St Elena, Tanazania Kigama & Guatemalan 5 estrella.
A house rule at St Ali is that anyone who goes on a trip has to do a presentation to the rest of the staff about the journey. Justin presented his views on Bali last night, a great night had by all.

About to upgrade the retail area at St Ali to make the process of buying coffee a little easier. Also look for the new brother budan website coming soon.

Clover coffee

What is clover coffee. The clover is basically a very stable platform to produce a brewed coffee similar to vacuum pot/french press. The boiler is PID controlled and the barista sets temp, brew time, grind, weight, and drink size. The cup quality is very clean with, I think, a beautiful highlight on the mid tones of coffee. Some coffees perform better than others and the roasting of coffee should be adapted to the style of brewing. Our favs are the Yirg, Rwandan Ingoboka, Cachoeira Yellow Bourbon and the Kenyan AA.
The clover is installed at the BBB store at 359 Lt Bourke Street, Melbourne,3000.






Coffee Farming

Last weeks trip to the Indonesian Island of Bali was a real eye opener. The potential for outstanding coffee is immense. High Altitude growing with hand picking, and hand sorting. Attention to detail in processing, typica varietal being dominate, and small collectives taking pride in their product. We cupped some outstanding coffees and are really looking forward to spending some more time with the farmers in the near future.

Back to work this week, looking forward to some cuban coffee and eithiopians through the clover. The brothers range of single origins will increase this week and we will start a rearranging of the retail area at St Ali.

You may notice a few new origins on the coffee ordering page. We have upgraded our ordering system so we can change things very quickly. We will reflect the changing coffees available. There is a few new coffees coming in and we a currently working on a new blend for BBB.

Bali Trip

A brief rundown on what we have been up to. Justin and I along with some coffee friends went to
the growing regions of Bali to check up a new pilot program set up to increase the quality of Indonesian coffee. A great program really focussing on the speciality coffee area. We cupped coffee with the locals. Checked out their processing methods and growing areas. A real sense of excitement gathered during the week as the Indonesians and us could see some real postives for the future coffee coming out of this region.

Brother Baba Budan

The Brother opened 4 weeks ago, it is our little retail shop in the city. Pastries and coffee only, small with seating for just 15 people. We have a clover machine which is great at highlighting
some of our single origin coffees. So a great place in the city to pick up some beans or just chill and have a coffee.






Brother Baba and Bali

Most of you will know we have recently opened a small store in the city.. Brother Baba Budan
359 Little Bourke Street. Also just back from Bali where we were looking at Kintamini coffee.
