St. Ali is short for Ali ibn Umar al-Shadhili.

Otherwise known as the patron saint of coffee.

Way back in the early 15th Century, our friend St. Ali introduced coffee beans to Muslim mystics. These magical men of the Middle East praised the beans as a God-like substance for its helpful stimulation during long prayer ceremonies.

Today most people use it to get work done. Possibly as a reason to crawl out of bed. Either way, it’s our homage to the man who popularized coffee, and the reason we devote our lives to it today.

At St. Ali, every coffee tells a different story. That may sound deep, but it’s not. This is how it works:

Wherever possible, we develop direct trade alliances with the world’s best coffee growers. We visit their farms, talk to the harvesters and show them the quality of bean we’re after. They send us the very best they find and in exchange we pay super premiums to ensure perfection. This way we both win, because they can improve their equipment and quality, and we get the very best beans. It’s a pretty sweet deal.

Once delivered, we lightly roast the beans in small batches to make sure they keep their distinct flavour. You see, coffee is a fruit, and they all taste different depending on where they’re grown, in what climate and what varietal they are.

Everyone here is devoted to giving you the best taste experience possible. Even our baristas are trained until they are Jedis in the art of brewing. It’s all about making sure the story of the bean is told in the clearest possible manner. Which even means putting a ten-day expiry date on all our coffees. Because we’re into fresh fruit, and fresh coffee is no exception.
